JOBS AT KENTRAIN

Position available: SOUS CHEF-Continental cuisine.

Location: Arusha-Tanzania
Size of the hotel: 29 room hotel.
Restaurant: 1 restaurant
Kitchen: A modern fully functional kitchen setup-Very professional
equipment.
Responsibilities: Sous Chef is the KEY person in the kitchen. He
co-ordinates all aspects of food preparation and execution of orders. He
oversees the other junior chefs and shall be the link between the main chef
and the rest of the team. In particular-this is what is expected of a sous
chef.
Essentially, the sous chef is responsible for planning and directing food
preparation in a kitchen. This will involve a large degree of supervising
other kitchen staff, as well as keeping an eye out for problems that arise
in the kitchen and seizing control of a situation at a moment’s notice. The
sous chef may also need to effectively discipline underperforming staff
members, as well as provide incentives for staff members to go above and
beyond the expectations of their particular chef roles.
CURRENT SET UP:
The hotel has the following:
1.      Executive chef: European (From Belgium) who will at some point be
replaced by a FRENCH chef.
2.      SOUS CHEF: VACANT
3.      Assistants: 3 persons.
4.      Cold preparation: 1 persons.
5.      Pastry 1 person.
It is therefore important for the SOUS chef to understand that given the
circumstances above-the position he is taking is that of a bridge between
the local Tanzanian Chefs and the Executive chef (European). The aim here
is to be able to provide Internationally acceptable standards in food
production. So the KENYAN Sous Chef should be able to co-operate with the
executive chef, must be willing to train and guide junior chefs under him
in accordance with the requirements in order to provide consistency in the
meals produced.
SALARY RANGE:
1.      Nett Salary of US$800-1000 per month.
2.      10-20% annual increase in salary.
3.      Permit to work in Tanzania-This is US$2600 value for a period of 2
years.( paid by employer)
4.      Performance bonus.-This is to be discussed.
5.      Paid annual leave.-28 days.
6.      Additional benefits
a.      If the candidate is good and proves his ability, we can provide
some housing benefit.
b.      AAR-Bronze level medical coverage.
